特有的干式熟成是最传统的醒肉方式，用高损耗为代价，并且降低内部湿度，换来更加鲜浓的牛肉味，这种工序在上世纪六十年代以后，基本就很少看见了。这块招牌带骨肉眼，就是经过了45天的干式熟成，削去生长了真菌和霉菌的风干外壳，烤完后以焦香伟岸的姿态出现，加上多种口味配菜的环侍，以及餐厅高度专业的配酒，成就一顿纯粹的牛排大餐。
