里昂是法国地地道道的美食之都。
Bouchon原意是“麦秆”是一种里昂本地独有的“麦秆餐馆”,早先餐馆的门口都会挂着一捆麦秆,是为前来打歇的食客打扫马背上的灰尘用,一来二去就用“麦秆”来代表地道里昂风味的餐厅。
里昂菜在法餐中算是比较怪异的,大量选用动物的内脏,如肠子、牛脑、猪皮等。
